Symptom
La Cornue oven not reaching temperature
An oven that gets warm and stalls short of its setting, takes an hour to preheat, or loses temperature the moment the door opens. On a vaulted oven some of this is thermal mass behaving as designed, and separating the design from the problem is the first job.

Five ordinary causes
What this usually turns out to be
Cheapest and commonest first, which is also the order we check them in. They sit hundreds of dollars apart, and only the unit settles which one is yours.
-
A partly failed element
On the electric side, it heats and stalls. Measured cold and under load rather than inspected.
Oven element and broiler replacement from $255 -
A restricted or rich oven burner
On the gas side. Out of sight, so it presents as slow cooking rather than as a flame problem.
Vaulted gas oven ignition repair from $275 -
A door seal that no longer seals
Continuous loss. On a vaulted oven the door is part of the cooking mass.
Oven door seal and hinge service from $215 -
A drifted thermostat
It genuinely believes it has arrived. Confirmed against a probe, not against the dial.
Oven thermostat calibration from $185 -
A convection fan that has stopped
On the fan ovens, the temperature is being made and not moved.
Convection fan repair from $235
In five minutes
Before you call anybody
None of it needs tools, and all of it makes the visit shorter.
-
01
Thermometer on the middle shelf
Full preheat, and write down both the ceiling and the time. Everything follows from those two numbers.
-
02
Check the door pull
Close a strip of paper in it at several points around the perimeter. Where it slides out freely, the seal is not sealing.
-
03
Try both functions
Bake and broil are separate circuits and a partial failure often affects one.
-
04
Check the range is level
A dish of water on the shelf should sit at one depth all over. It is the maker's own test.
How it shows up
What people describe when they call
A shortcut
Narrow it down before anybody arrives
A description of the behaviour leaves a few possible causes. A code names the subsystem before anybody opens anything, which is why it is worth photographing before it clears.

About La Cornue oven not reaching temperature
Measure it before anything else
Put an oven thermometer on the middle shelf and run a full preheat. Two numbers matter: what it actually reaches, and how long it takes. A vaulted oven is meant to be unhurried — it is a heat reservoir, not a fan oven — so twenty-five minutes to a stable 350 °F is not a problem. Reaching 300 °F and stopping is. And if it reaches temperature and then loses it whenever the door is opened for a moment, look at the seal rather than the heat source.
What it usually means, by the kind of La Cornue appliance
La Cornue sells one appliance in several forms, and the same behavior points at different things on each of them. A built-in side-by-side and an integrated column are not the same service situation, and a dual-fuel range and an induction range fail in different halves.
- Château vaulted gas oven — 13,000 BTU on a grand oven, 11,000 on a standard one. A restricted or rich burner shows up here as slowness rather than as a flame complaint.
- Château vaulted electric oven — Elements and a thermostat. An element that has partly failed heats and stalls, which is exactly this page.
- CornuFé electric convection ovens — Element, fan and sensor. A failed fan turns a convection oven into a slow conventional one.
- Château Tourelle — Multifunction electric — the mode selected changes which elements run, so a problem can affect one mode and not another.
Slow, or short?
These are different problems and people describe both as "not getting hot enough". Slow means it arrives eventually — the heat source is weak or the cavity is losing heat as fast as it gains it, which points at a burner, a partly failed element or a seal. Short means it stops climbing and holds somewhere below the setting, which points at a control that thinks it has arrived, or a heat source that can no longer overcome the losses at that temperature. The measurement separates them in one preheat, which is why we ask for a number rather than an impression.
The vaulted oven's own defense
Worth saying clearly, because it saves people money: a Château gas oven has no fan, no window and considerable thermal mass, and it is not supposed to behave like a modern convection oven. It comes up slowly, holds beautifully, and recovers slowly after the door has been open. Owners moving from a fan oven often read all three as problems. If the measurements come back within specification we will say so and charge for the diagnostic rather than inventing a repair — and then show you what the oven is actually good at.

Questions about La Cornue oven not reaching temperature
Preheating takes forty minutes. Is that normal for this oven?
Longer than a fan oven, yes; forty minutes to a moderate temperature, probably not. The honest answer needs the number: which temperature, and measured on a thermometer rather than read off the dial. A grand vaulted gas oven at 13,000 BTU coming to 350 °F should be there comfortably inside half an hour. If it takes forty minutes to reach 300 °F and stops, that is a problem. If it takes forty minutes to reach a genuine 450 °F, that is a heavy oven doing its job.
Only the top of the food browns and the base stays pale.
That reads like a broil circuit working and a bake circuit that is not, which on this make is entirely possible — every vaulted gas oven carries an electric broiler above it, and the electric ovens have separate bake and broil elements. So the oven can lose its main heat and keep its browning, which feels like an oven that is half working because it is. Tell us which function still works; it points straight at the circuit.
