La Cornue oven thermostat calibration

An oven that has drifted hot over years, and a cook who has quietly rewritten every recipe around it. The manual is explicit: an oven that gets hotter as the range ages and does not come back when the dial is turned down wants a thermostat, not a new habit.

How this visit actually goes

The same order every time, so nothing is opened and nothing is charged before you have seen the figure and said yes.

  1. 01

Probe on the shelf, full cycle

One reading proves nothing. The number that matters is what it holds, and how far it overshoots getting there.

  2. 02

    Rule out the design

A vaulted oven is uneven on purpose. Level, door seal and tray size come before any talk of calibration.

  3. 03

    Measure overshoot and hold

How far past the setpoint it goes, and what it settles at. Two different numbers, two different problems.

  4. 04

    Calibrate or replace

Some thermostats adjust; a thermostat that has drifted this far usually does not come back.

  5. 05

    Re-measure and write it down

The report carries the before and after figures, so the owner can trust their oven again.

Applies to

  • A tall electric wall oven built into a run of warm oak cabinetry, its door standing fully open on an empty cavity with a circular fan grille on the back wall and three wire shelf runners either side.
Vaulted ovens and convection ovens — gas, electric, and the Tourelle wall oven

La Cornue oven repair in Miami

There are three different ovens on this make and they fail in three different ways. The vaulted gas oven cooks by radiant heat inside a sealed dome and has an electric broiler over it. The vaulted electric oven sits on the other side of the same range. And since 2025 there is a standalone one: the Château Tourelle, a fully electric multifunction wall oven in 60 and 75 centimeter widths, built to sit in a cabinet run next to a Château cooktop. Which of the three you have decides everything about the repair.

    • Vaulted gas, vaulted electric and the electric Tourelle wall oven
    • Gas ovens carry an electric broiler — browning and baking can fail separately
    • Thermostat drift is measured against a probe, never adjusted by feel

  • A heavy hand-built enameled range cooker photographed low from its front left corner in a bright cream kitchen, the deep colored enamel of the flank filling the left of the frame, a brass rail and a row of round brass knobs running away from the camera, two oven doors below, adjustable feet on a warm oak floor.
Dual fuel · gas · all-induction — Château, Châtelet, Castel, Grand Palais, CornuFé

La Cornue range repair in Miami

The range is what La Cornue makes, and everything else in the line exists around it. A Château is built to order in France, arrives in a crate weighing over half a ton, and is assembled from parts a customer chose one at a time: which oven is gas and which is electric, whether the top carries a French top, a lava-rock grill, induction or a teppanyaki plate, which of about fifty enamels, which trim metal. Two of them are almost never identical. That is the first thing a repair on one has to take seriously — the model number tells you the size, and the configuration code tells you what is actually under the lids.

    • Dual fuel, all gas or all induction — three different ranges, three parts lists
    • The configuration code, not just the model, decides what is on the top
    • Made-to-order enamel and trim are part of the job, not an extra

About La Cornue oven thermostat calibration

About calibrating a vaulted oven

Two numbers matter and they fail differently: how far the oven overshoots on the way up and what it settles at. An oven that spikes to 425 and settles at 350 is behaving normally; one that settles at 390 has drifted, and the manual itself says an oven that gets hotter with age and does not come back when the dial is turned down wants a thermostat. Before any of that, the free causes are eliminated — level, door seal, tray size — because a vaulted oven is uneven by design and design is not drift.

Questions about La Cornue oven thermostat calibration

Can I just set it lower?

You can, and many do for years. Two arguments against: a drifting thermostat rarely stops, so this year's offset is wrong next year; and an oven reading 350 while delivering 390 has no headroom left at 500, so anything needing real heat becomes unpredictable.

Will my cooking change afterwards?

Yes, and we say so before the work rather than after. Three years of learned adjustments become errors in the other direction the moment the oven is correct. The report carries the before and after figures so you know how much to unlearn.
