La Cornue oven cooks unevenly
On a vaulted oven a degree of unevenness is the design — heat radiates from a dome and the strongest zone is not the geometric center. La Cornue's own cooking notes tell owners to turn a large item during cooking and to leave space between loaded shelves. The job here is to find what has made it worse than designed.

Five ordinary causes
What this usually turns out to be
Cheapest and commonest first, which is also the order we check them in. They sit hundreds of dollars apart, and only the unit settles which one is yours.
-
The range is not level
The maker's own first check. It changes how far food sits from each radiating surface.
Range relocation and leveling from $395 -
An oversized tray or an overloaded shelf
It blocks the circulation the cavity has. Not a problem, and worth knowing before a visit.
Diagnostic visit from $95 -
A door seal or catch out of adjustment
Heat leaves at one point and that side stays cooler for the whole cook.
Oven door seal and hinge service from $215 -
A partly failed element
Electric side. The pattern is repeatable and it maps to the element.
Oven element and broiler replacement from $255 -
A stopped or slow convection fan
On the fan ovens the heat is being made and not moved.
Convection fan repair from $235

Before you call anybody
None of it needs tools, and all of it makes the visit shorter.
-
01
Do the water test
A dish of water on the middle shelf. One depth all over, or the range is not level.
-
02
Bake a tray of scones or a sheet of bread
The oldest test there is, and it maps the cavity better than any thermometer.
-
03
Paper-test the door seal
At several points around the perimeter. Free movement means no seal there.
-
04
Repeat with one shelf only
If a single, centrally placed tray bakes evenly, the problem was loading rather than the oven.
How it shows up
What people describe when they call
A shortcut
Narrow it down before anybody arrives
A description of the behaviour leaves a few possible causes. A code names the subsystem before anybody opens anything, which is why it is worth photographing before it clears.

About La Cornue oven cooks unevenly
The three free checks the manual itself lists
Level: a dish of water on the shelf should sit at one depth all over — if it is deeper at the back, the range needs raising at the back or lowering at the front. Door seal and catch: the door has to be held firmly against the seal, and a strip of paper closed in it should not pull out freely anywhere. Trays: nothing larger than the specified size, and space left between two loaded shelves so heat can circulate. All three are in the guide, all three are free, and between them they explain most of these calls.
What it usually means, by the kind of La Cornue appliance
La Cornue sells one appliance in several forms, and the same behavior points at different things on each of them. A built-in side-by-side and an integrated column are not the same service situation, and a dual-fuel range and an induction range fail in different halves.
- Château vaulted gas oven — Radiant heat from below and around, with an electric broiler above. Unevenness front-to-back is normal; side-to-side is not.
- Château vaulted electric oven — Elements top and bottom. A partly failed element produces a clear, repeatable pattern.
- CornuFé convection ovens — A fan is meant to even this out, so uneven cooking in a convection oven points at the fan first.
- Château Tourelle — Multifunction, so the mode changes which elements run and therefore the pattern of the unevenness.
What a vaulted oven is actually for
The voûte cooks by radiant heat from the mass around the food rather than by moving hot air through it, and the graded heat is a feature — it is why a roast in one develops a crust the way it does, and why a Château gas oven has no window to lose heat through. An owner arriving from a fan oven, where evenness is the design goal, reasonably reads this as a defect. A fair proportion of these visits end with measurements inside specification and a conversation about shelf position and turning a roast, and that is a legitimate outcome of a diagnostic rather than a wasted call.
When the pattern is a part
Failures give repeatable patterns and design gives gradients. An oven that is consistently pale on the left half, or that browns everything at the back and nothing at the front regardless of shelf, or that has changed its behavior in a fortnight — those are problems. A bake test maps them faster than a thermometer does, and on the electric ovens the pattern usually points straight at an element or its connections. On the gas side it points at the burner, the diffuser, or a door that is no longer being pulled onto its seal.

Questions about La Cornue oven cooks unevenly
It has always been like this since we bought the house.
Then the first suspects are installation rather than wear, and they are cheap to check: level, door adjustment, and whether the range was ever commissioned properly at all. We see ranges that were slid into place, connected and never leveled, which on an appliance with adjustable legs and a specified height range is a real omission. It is also worth establishing what the oven should be doing, because "always" sometimes means "since we moved from a convection oven".
Would a convection fan retrofit fix it?
No, and it is not something we would do. A vaulted gas oven is not a fan oven with the fan left out — the cavity, the burner position and the whole thermal design assume radiant cooking, and cutting a fan into it would compromise the sealing and the mass that make it work. If what you want is fan cooking, that is what the electric side of a dual-fuel range is for, or the Tourelle wall oven, which is multifunction by design. Use each oven for what it is good at; that is why the range has two.
