- “A stiff valve is failing, not dry”
- “A knob that will not return cleanly to off is urgent”
- “Every valve gets worked, not only the one complained about”
Symptom
La Cornue stiff or stuck burner knob
Brass knobs on mechanical valves, used several times a day for years in a humid kitchen. Stiffness is the early warning and it is worth acting on: the failure mode of a stiff valve is not that it becomes hard to turn, but that one day it stops where it is.

Five ordinary causes
What this usually turns out to be
Cheapest and commonest first, which is also the order we check them in. They sit hundreds of dollars apart, and only the unit settles which one is yours.
-
Grease and residue in the valve stem
Years of kitchen air in a mechanism that was never meant to be lubricated in place.
Burner knob and valve rebuild from $195 -
A worn or galled valve taper
The stiffness is metal, not dirt, and it does not come back.
Burner knob and valve rebuild from $195 -
Corrosion in a coastal kitchen
Salt air reaches the stem behind the knob and works inwards.
Burner knob and valve rebuild from $195 -
A knob or bezel binding on the fascia
Sometimes it is not the valve at all, and that is worth ruling out before anything is opened.
Diagnostic visit from $95 -
Heat damage to a bezel or seal
A knob next to the plaque or the grill lives hotter than the others and ages first.
Enamel panel and trim service from $265

None of it needs tools, and all of it makes the visit shorter.
-
01
Turn it to off deliberately
Firmly and fully. A valve that will not shut cleanly is today's problem, not next month's.
-
02
Try every knob
One stiff valve is local. Several is the whole set aging together, and that is a different conversation.
-
03
Pull the knob off if it comes easily
If the stem turns freely with the knob off, the knob or bezel is binding and the valve is fine.
-
04
Do not force it and do not oil it
Household oil in a gas valve is a fire risk and it hides the problem for a fortnight.

About La Cornue stiff or stuck burner knob
The question that decides the urgency
Does it return to off cleanly and completely? A valve that is stiff through its range but shuts firmly is a job to book in the next week or two. A valve that has to be persuaded to the off position, or that feels as though it stops slightly short, should be treated as a gas problem today — because the position you cannot reach reliably is the one that matters. Shut the range off at its main valve in the meantime.
What it usually means, by the kind of La Cornue appliance
La Cornue sells one appliance in several forms, and the same behavior points at different things on each of them. A built-in side-by-side and an integrated column are not the same service situation, and a dual-fuel range and an induction range fail in different halves.
- Château gas and dual-fuel — Mechanical brass valves, one per burner plus the plaque and grill. Rebuilt or replaced individually.
- CornuFé 90 and 110 — Same mechanical arrangement with more standardised valve parts.
- All-induction and Tourelle — Electronic controls. A dead or unresponsive control is a different page.
Why we do not lubricate these
It is the obvious thing to try and it is the wrong thing to do. A gas valve's taper is a sealing surface, the grease specified for it is a high-temperature gas-rated compound rather than anything from a household shelf, and putting the wrong lubricant in buys a few weeks of easy turning while the underlying wear continues out of sight. Worse, it can carry residue onto the seat and produce a valve that passes gas with the knob off — which is how a stiff knob becomes the gas-smell page.
Why the visit covers all of them
The valves on a range have all done the same number of years in the same kitchen air. When one has gone stiff, the others are usually a season behind it, and the labor of getting to the manifold is the same whether we rebuild one valve or four. So the diagnostic works every knob on the range and the report tells you which are fine, which are marginal and which need doing — and you decide. It is the difference between one visit and three.

Questions about La Cornue stiff or stuck burner knob
Can I just live with it?
For a while, if it still shuts off completely and firmly. What we would not do is live with a valve that needs coaxing to off, or one that has begun to feel gritty rather than merely firm — grittiness is metal moving on metal and it accelerates. Also worth knowing: a stiff valve gets forced, and a forced knob is how stems shear. Then the burner is stuck on whatever setting it was last left at, which is a considerably worse afternoon.
The knob itself is loose and spins. Same problem?
Opposite problem, and often an easier one. A knob that spins without turning the valve has a worn knob or a stripped stem — the valve underneath may be perfectly good. Take the knob off and turn the stem with pliers gently to see whether it moves properly; if it does, it is a knob, which is a wear part on a range this age and a cheap fix. Do tell us which of the two you have, because we bring different things.
