What moves it

Why two of the same job cost different amounts

These apply at the same time and in both directions. Which of them is true of your kitchen is what the on-site diagnostic settles.

  • What the finding is

A burner adjustment and a re-season is the low end. A warped or cracked plate is a part.

  • Large or petite plaque

Different plates, different weights, different lead times.

  • The state of the underside

Rust and scale on the face nobody inspects, which insulates the iron from its own burner.

  • How long it has been like that

A plate kept dry and seasoned for twenty years is recoverable. One that has been rusting is often not.

  • Whether the plate has to be ordered

Against the range's own size and configuration, with a lead time quoted before ordering.

The work itself

What we actually do

The job behind the figure: what it involves, when a symptom points at it, and what we check first.

  • A heavy round cast-iron plate lifted clear of the range and standing on edge against a folded blanket on the floor, the empty ring and burner it came off visible above in the steel top.

    French top service

The plaque coup de feu is a single cast-iron plate heated by one 7,500 BTU burner directly under its center, and it is the most-used and least-understood part of the range. Cracks, warping, rust, dead cold spots and a burner running wrong underneath are all different problems that present the same way.

    • Crazing in the seasoning and a crack through the iron are told apart
    • The burner beneath it checked first — most cold spots start there
    • Re-seasoned properly, so the plate is handed back working

About La Cornue french top service cost

What you are actually paying for

A judgement. The plate either has a crack through the iron or it does not, and getting that answer wrong in either direction is expensive: condemning a sound plate costs a made-to-order part, and passing a cracked one leaves heat crossing an interrupted casting. So the visit maps the plate hot, checks the burner under it, inspects the underside and the seat, and then says which. The re-seasoning at the end is the part you can see; the assessment is the part you are buying.

Questions about La Cornue french top service cost

Is a new plate worth it, or should I replace the range?

The plate, without hesitation. A plaque is one module of a range that will outlive the kitchen it is in, and even a made-to-order plate is a small fraction of what the range is worth. What we will do is tell you honestly whether the plate is finished or merely marked — a hairline at the edge, kept dry, can go on for years.

Can you re-season it, or should I?

Either. It is part of the service if we are there, and it is genuinely something an owner can do well — the technique matters more than the product. What we would rather you did not do is wash a hot plate down, which is the single commonest cause of the crack that brings us out.
