On the visit

How this visit actually goes

The same order every time, so nothing is opened and nothing is charged before you have seen the figure and said yes.

  1. 01

    Strip the bed

Saturated rocks do not recover. They are consumable and they are cheap next to the consequences of leaving them.

  2. 02

    Clear the linear burner

Along its whole length. A grill that lights at one end and not the other is a blocked burner, not a weak supply.

  3. 03

    Drip tray and grate

Where the fat actually goes, and where corrosion starts in this climate.

  4. 04

    Rebuild the bed evenly

An uneven rock bed is what produces flare-ups on one side and cold food on the other.

  5. 05

Run it and watch the flame

Along the burner, under load, with the grate on. This is the only test that means anything.

La Cornue range repair in Miami

The range is what La Cornue makes, and everything else in the line exists around it. A Château is built to order in France, arrives in a crate weighing over half a ton, and is assembled from parts a customer chose one at a time: which oven is gas and which is electric, whether the top carries a French top, a lava-rock grill, induction or a teppanyaki plate, which of about fifty enamels, which trim metal. Two of them are almost never identical. That is the first thing a repair on one has to take seriously — the model number tells you the size, and the configuration code tells you what is actually under the lids.

    • Dual fuel, all gas or all induction — three different ranges, three parts lists
    • The configuration code, not just the model, decides what is on the top

La Cornue cooktop repair in Miami

A La Cornue cooktop is a set of modules chosen at order time and dropped into a stainless frame: brass gas burners at 17,000 and 7,500 BTU, a 22,000 BTU power burner, the cast-iron plaque coup de feu heated by a single burner underneath, a lava-rock grill, ceramic-glass induction zones, an electric teppanyaki plate. This is the top of a range, and each module is a different repair. Sold on its own without ovens beneath it, the same top is a rangetop, and it has its own page.

    • Gas, induction, French top, grill and teppanyaki modules on one frame
    • Induction is the only half of this line that shows a code — E2, U400, Er
    • A cracked glass hob is disconnected first and diagnosed second

About La Cornue lava rock grill service

About the lava-rock grill module

A linear 14,500 BTU burner under a bed of natural lava rock, living its whole life under fat. The rock is a consumable: it absorbs fat until it becomes one sealed mass, at which point it stops radiating, starts flaring and smokes — three complaints with one inexpensive cause. Beyond the bed, the burner wants clearing along its whole run and the drip path has to be able to drain, because that path is where the air the burner needs comes from. In a coastal kitchen the tray and grate are also where corrosion starts.

Questions about La Cornue lava rock grill service

Can I use ordinary barbecue lava rock?

Mostly yes, and it is one of the few genuinely interchangeable things here — natural rock is natural rock, and the bed is a specified depth of loose rock rather than a proprietary cartridge. Use rock rather than ceramic briquettes, and get the depth even, because an uneven bed is what flares on one side.

How often should the bed be replaced?

With real use, once a year; with occasional use, every couple of years or whenever the rock has begun to look like one piece rather than many. It is the cheapest maintenance on the range and it makes the most visible difference.
