La Cornue surface burner and igniter service

Clicking with no flame, a burner that lights and will not stay lit, a lazy yellow flame. On brass burners in a coastal kitchen these are three symptoms of a short list of causes, and none of them is the ignition module when only one burner is affected.

How this visit actually goes

The same order every time, so nothing is opened and nothing is charged before you have seen the figure and said yes.

  1. 01

    Which burners, and since when

All of them points at the module or the supply. One of them points at that burner.

  2. 02

    The electrode and its ceramic

Moisture after a cleaning, a cracked insulator arcing to the wrong place, a gap that has opened up.

  3. 03

    The ports and the cap

Cleared and seated. A flame that cannot travel around the crown cannot reach the spark.

  4. 04

The orifice and the air shutter

This is where a yellow flame is actually fixed, and where a bad propane conversion shows itself.

  5. 05

    Light it cold and hot

A burner that lights from cold and sulks when the range is hot is a different problem, and testing only once misses it.

Applies to

  • A heavy hand-built enameled range cooker photographed low from its front left corner in a bright cream kitchen, the deep colored enamel of the flank filling the left of the frame, a brass rail and a row of round brass knobs running away from the camera, two oven doors below, adjustable feet on a warm oak floor.

La Cornue range repair in Miami

The range is what La Cornue makes, and everything else in the line exists around it. A Château is built to order in France, arrives in a crate weighing over half a ton, and is assembled from parts a customer chose one at a time: which oven is gas and which is electric, whether the top carries a French top, a lava-rock grill, induction or a teppanyaki plate, which of about fifty enamels, which trim metal. Two of them are almost never identical. That is the first thing a repair on one has to take seriously — the model number tells you the size, and the configuration code tells you what is actually under the lids.

    • Dual fuel, all gas or all induction — three different ranges, three parts lists
    • The configuration code, not just the model, decides what is on the top
    • Made-to-order enamel and trim are part of the job, not an extra
    Range repair
  • A gas cooking surface with four open brass burner crowns set into a pale limestone island, photographed at a low three-quarter angle so the island runs away to the right and a bright cream kitchen is soft behind it.

La Cornue cooktop repair in Miami

A La Cornue cooktop is a set of modules chosen at order time and dropped into a stainless frame: brass gas burners at 17,000 and 7,500 BTU, a 22,000 BTU power burner, the cast-iron plaque coup de feu heated by a single burner underneath, a lava-rock grill, ceramic-glass induction zones, an electric teppanyaki plate. This is the top of a range, and each module is a different repair. Sold on its own without ovens beneath it, the same top is a rangetop, and it has its own page.

    • Gas, induction, French top, grill and teppanyaki modules on one frame
    • Induction is the only half of this line that shows a code — E2, U400, Er
    • A cracked glass hob is disconnected first and diagnosed second
    Cooktop repair
  • A wide stainless cooking top dropped into a counter run photographed square on from the front, so that what is beneath it is plain: two banks of oak drawers and a cupboard door, and no oven at all.
T40 to T48 · 200 mm into the counter · the same modules, no ovens beneath

La Cornue rangetop repair in Miami

A rangetop is the top half of a La Cornue sold in its own right: the same brass burners, the same plaque coup de feu, the same grill, induction and teppanyaki modules, in a stainless frame 200 mm deep that drops into a counter with nothing underneath it. T40 through T48, from 600 to 1800 mm wide. Every cooktop repair applies to it and no oven repair does — which makes it the simplest appliance in the line and the one most often confused with the range on a booking.

    • T40 to T48 — the same configuration codes as the range
    • No ovens, no oven thermostats, no door seals
    • Much lighter than a range, so the one job that prices weight rarely applies

About La Cornue surface burner and igniter service

About burner and igniter work on brass burners

The brass burner assemblies on these ranges come apart for cleaning, which is one of the pleasures of owning one and the leading cause of this call: they go back wet, or slightly off their seats, and in a kitchen at eighty per cent humidity a splashed electrode can take a day to dry. Beyond that it is ports, caps, crowns, the electrode and its ceramic — small parts, reached from the front, and normally one visit. The ignition module is tested rather than swapped, because it is the expensive part and it is rarely the answer.

Questions about La Cornue surface burner and igniter service

Should I clean the ports myself?

Cleaning caps and crowns with hot water and a soft brush is ordinary maintenance and it fixes a share of these calls, so yes. Two rules: never push wire or a pin into a port, because an enlarged port changes the flame permanently and turns a free fix into a part; and let everything dry completely before reassembly, or you will have created the problem.

How do I tell the module from the electrode?

Count the burners. A failed ignition module takes every burner with it; one dead burner is that burner's electrode, ceramic or ports. It is a ten-second observation and it is the most useful sentence you can give us on the phone.
