# La Cornue french top service

### About the plaque coup de feu

A single cast-iron plate heated by one 7,500 BTU burner directly beneath its center, and the most-used, least-understood part of the range. It is meant to be uneven — hottest above the burner and cooler as you work outwards, which is how you cook on one — so the first question on this visit is what the owner expects, and a proportion of them end in a demonstration rather than a repair. Where there is a real problem it is usually the burner underneath, then the underside of the plate, then the air path, then the seating, and only then the iron.

What this involves

Crazing in the seasoning and a crack through the iron are told apart

The burner beneath it checked first — most cold spots start there

Re-seasoned properly, so the plate is handed back working

Read the plate

Where the heat actually is, with the burner running. The center is meant to be hottest; a cool center is a burner problem, not a plate problem.

Crack or crazing

One is cosmetic and one changes how heat crosses the iron. This is the question the whole visit turns on.

The burner and the drip area underneath

A rich flame or a blocked drip tray puts more heat into one spot than the plate spreads.

Rust and the underside

The side nobody looks at, and the side that rusts first in this climate.

Season and hand it back

A stripped or rusted plate is cleaned back and re-seasoned, and the owner is told how to keep it that way.

### What temperature should the center reach?

Hot enough to sear directly on the iron after a proper preheat, with a usable simmer at the outer edge. We measure rather than quote one number, because the honest figure depends on the plate size, the fuel and how long it has been up. What matters diagnostically is the gradient and the ceiling: a plate whose center now tops out where its mid-zone used to be has lost its burner, not its iron.

### Does seasoning affect the heat?

Not measurably. What does insulate is the opposite — rust and baked-on carbon, particularly on the underside where nobody looks. Cleaning that face back and re-seasoning the top is part of the service, and we will show you how to keep it rather than leaving you to guess.
