# La Cornue burner knob and valve rebuild

### About brass knobs and mechanical valves

Used several times a day for decades in a humid kitchen, and stiffness is the early warning. The failure mode of a stiff valve is not that it becomes hard to turn but that one day it stops where it is — which is why a knob that will not return cleanly and completely to off is a gas matter today rather than a job for next month. A stiff valve is failing rather than dry, so it is rebuilt or replaced and never lubricated over, and every valve on the range is worked while the manifold is reachable.

What this involves

A stiff valve is failing, not dry — it is rebuilt or replaced

Knobs, bezels and stems treated as wear parts

Every valve on the range checked, not only the one complained about

Work every valve

The owner notices one. The visit is worth more if it finds the other two on their way.

Test the off position

A knob that does not return cleanly to off is the reason this job is not postponed.

Rebuild or replace

A stiff valve is failing rather than dry. Grease buys weeks and hides the problem.

Knob, bezel and stem

Brass wear parts on a range used several times a day for decades.

Leak check and relight

Every valve opened is tested, every burner relit and checked at low flame.

### It is only slightly stiff. Can it wait?

For a while, if it still shuts off completely and firmly. Not if it needs coaxing to off, and not if it feels gritty rather than merely firm — grittiness is metal on metal and it accelerates. The practical argument: stiff valves get forced, and forced knobs shear stems, which leaves a burner stuck wherever it was last set.

### The knob spins without turning anything.

Opposite problem, usually cheaper — a worn knob or a stripped stem over a valve that may be perfectly sound. Take the knob off and turn the stem gently; if it moves properly, it is a knob, which is an ordinary wear part. Tell us which of the two you have.
