### Is a new plate worth it, or should I replace the range?

The plate, without hesitation. A plaque is one module of a range that will outlive the kitchen it is in, and even a made-to-order plate is a small fraction of what the range is worth. What we will do is tell you honestly whether the plate is finished or merely marked — a hairline at the edge, kept dry, can go on for years.

### Can you re-season it, or should I?

Either. It is part of the service if we are there, and it is genuinely something an owner can do well — the technique matters more than the product. What we would rather you did not do is wash a hot plate down, which is the single commonest cause of the crack that brings us out.
